1 lb fresh young carrots (baby or regular, peeled)

3 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon balsamic vinegar (optional, for drizzling)

Fresh parsley, chopped (for garnish)

Prep the Carrots: If you're using regular carrots, cut them in half lengthwise, or leave baby carrots whole. Make sure they are all roughly the same size for even cooking.

    Make the Marinade: In a medium mixing bowl, whisk together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. This will create a fragrant herbal marinade.

      Marinate the Carrots: Add the carrots to the bowl with the marinade, ensuring each carrot is evenly coated. Let them marinate for at least 15 minutes at room temperature. For deeper flavor, you can let them marinate for up to an hour in the refrigerator.

        Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using a grill basket, give it a light oiling to prevent sticking.

          Grill the Carrots: Place the carrots directly on the grill grates or transfer them to the grill basket. Grill for about 8 to 12 minutes, turning occasionally until they are tender and have nice grill marks. If you're using baby carrots, they might take a little less time—watch for that perfect tender-crisp texture!
