½ cup unsalted butter, softened

2 large eggs

1 tsp vanilla extract

¾ cup grape soda (like a classic grape soda)

⅓ cup buttermilk

For the Grape Soda Frosting:

½ cup unsalted butter, softened

3 cups powdered sugar

¼ cup grape soda

1 tsp vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. Set aside.

      Cream the Butter: In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until creamy, about 1-2 minutes.

        Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

          Combine Dry and Wet Ingredients: Reduce the mixer speed, and gradually add the dry mixture to the butter mixture, alternating with the grape soda and buttermilk. Start and end with the dry ingredients, mixing until just combined. Be careful not to overmix.

            Pour into Liners: Fill each cupcake liner about two-thirds full with the batter.

              Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let the cupcakes cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

                Make the Frosting: In a clean mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, then mix in the grape soda and vanilla extract until smooth and fluffy. Adjust the consistency with more powdered sugar or grape soda as needed.
