8 ounces rotini pasta

1 can (5 ounces) tuna in water, drained

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup green bell pepper, diced

1/4 cup olives, sliced (optional)

1/2 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

1 teaspoon dried Italian herbs

Fresh parsley or basil for garnish (optional)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Once the water is at a rolling boil, add the rotini pasta and cook according to package instructions until al dente. Drain the pasta and rinse it under cold water to cool.

    Prepare the Veggies: While the pasta is cooking, chop the cherry tomatoes, cucumber, red onion, green bell pepper, and olives (if using) into bite-sized pieces.
