Ingredients

4 tablespoons all-purpose flour

2 tablespoons granulated sugar

1/4 teaspoon baking powder

1/4 teaspoon salt

1 tablespoon vegetable oil

3 tablespoons milk (or a dairy-free alternative)

2 tablespoons creamy peanut butter

1/4 teaspoon vanilla extract

Optional: chocolate chips or chopped peanuts for topping

Instructions

In a microwave-safe mug (roughly 12 oz size), combine the all-purpose flour, granulated sugar, baking powder, and salt. Mix well until all dry ingredients are uniformly distributed.

Add the vegetable oil, milk, and vanilla extract to the dry ingredients. Stir vigorously until the batter is smooth and free of lumps.

Gently fold in the peanut butter, making sure it's evenly distributed throughout the batter. If you're using chocolate chips or chopped peanuts, sprinkle some in now for added texture (and flavor!).

Microwave the mug cake on high for about 1 minute and 30 seconds. Since microwave powers can vary, check for doneness. The cake should be puffed and set on the top but a little moist in the center.

Allow the mug cake to cool for a minute before digging in. You can top it off with a dollop of more peanut butter, whipped cream, or more chocolate chips if desired.
