Ingredients
  

1 lb (450g) ground beef (or turkey)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

4 cups beef broth (or vegetable broth for a lighter version)

1 cup diced carrots

1 cup diced celery

1 cup diced potatoes (Yukon Gold or red potatoes)

1 cup canned diced tomatoes (with juices)

1 cup green beans (fresh or frozen)

1 tbsp olive oil

Fresh parsley or basil for garnish

Instructions
 

Prepare the Meatballs: In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, dried Italian herbs, salt, and pepper. Combine until well mixed. Roll the mixture into meatballs, about 1-inch in diameter.

    Brown the Meatballs: In a large pot over medium heat, add olive oil. Once hot, add the meatballs in batches, browning them on all sides for about 5-7 minutes. Remove and set aside.

      Sauté the Vegetables: In the same pot, add diced carrots, celery, and potatoes. Sauté for about 5 minutes until they start to soften.

        Add Broth and Tomatoes: Pour in the beef broth and canned diced tomatoes (including juices). Bring the mixture to a boil.

          Simmer: Return the browned meatballs to the pot. Reduce heat to a simmer and cook for about 20 minutes, or until the vegetables are tender and meatballs are cooked through.

            Add Green Beans: Stir in the green beans and let them cook for an additional 5 minutes.

              Taste and Adjust: Taste the soup and adjust seasoning with salt and pepper if needed.

                Serve: Ladle the soup into bowls and garnish with fresh parsley or basil. Serve hot with crusty bread or crackers for a complete meal.
