2 tablespoons olive oil

1 medium onion, finely diced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for a kick)

1 can (28 oz) crushed tomatoes

4 cups vegetable or chicken broth

1 cup heavy cream

1 package (16 oz) gnocchi (store-bought or homemade)

1 cup fresh spinach (or kale), chopped

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add Herbs and Tomatoes: Sprinkle in the dried oregano, dried basil, and red pepper flakes (if using). Stir to combine and cook for another minute, allowing the herbs to bloom. Pour in the crushed tomatoes, mixing well.
