1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 can (10 oz) enchilada sauce (red or green)

1 tsp ground cumin

1 tsp chili powder

1 tsp paprika

Salt and pepper to taste

8 large flour or corn tortillas

2 cups shredded cheddar cheese (or a blend of cheeses)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Filling: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat if necessary.

      Add Aromatics: Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.

        Season the Mixture: Stir in the black beans, corn, cumin, chili powder, paprika, salt, and pepper. Pour in half of the enchilada sauce. Stir well to combine, then simmer for another 5 minutes. Taste and adjust seasoning if needed.

          Fill the Tortillas: On a flat surface, take one tortilla and spoon about 1/3 cup of the beef filling into the center. Sprinkle some shredded cheese on top. Roll the tortilla tightly and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas and filling.

            Add Sauce and Cheese: Pour the remaining enchilada sauce over the rolled tortillas, ensuring they’re well covered. Sprinkle the remaining shredded cheese generously on top.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

                Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped cilantro and serve hot with sour cream on the side.
