Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup rolled oats

1 cup chocolate chips (semi-sweet or dark)

1 cup salted caramel sauce

Sea salt flakes, for garnish

Instructions

Preheat the oven: Start by preheating your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the butter and sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

Add eggs and vanilla: Beat in the eggs one at a time, then add the vanilla extract, mixing until combined.

Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring just until combined.

Fold in oats and chocolate: Gently fold in the rolled oats and chocolate chips until evenly distributed throughout the dough.

Add caramel: Take about 1 tablespoon of dough and flatten it slightly in your palm. Place a small spoonful of salted caramel sauce in the center and wrap the dough around it, forming a ball. Ensure the caramel is securely enclosed.

Prepare for baking: Place the cookie balls on the prepared baking sheets, spacing them about 2 inches apart. Sprinkle a tiny pinch of sea salt flakes on top of each cookie for that irresistible salted caramel twist.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are slightly soft. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Serve and enjoy: These cookies are best enjoyed warm, allowing the caramel to be slightly gooey and the cookies to be crunchy on the outside.
