12 oz (340 g) cheese tortellini

2 tbsp olive oil

3 cups fresh spinach, chopped

8 oz (225 g) mushrooms, sliced

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes, or until they are golden brown and tender.

      Add Spinach and Garlic: Stir in the minced garlic and chopped spinach, cooking for another 2-3 minutes until the spinach wilts down.
