Creamy Parmesan Orzo with Chicken and Asparagus

1 lb boneless, skinless chicken breasts, diced

1 cup orzo pasta

2 tbsp olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup asparagus, trimmed and cut into 1-inch pieces

4 cups chicken broth (low sodium)

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and pepper, to taste

1 tsp Italian seasoning

2 tbsp fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add another tablespoon of olive oil. Add the chopped onion and cook until translucent, about 2-3 minutes. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Cook the Asparagus: Add the asparagus pieces to the skillet and sauté for about 2-3 minutes until they start to soften but still have a crunch.

        Cook the Orzo: Pour in the chicken broth and bring to a simmer. Stir in the orzo and Italian seasoning. Cook uncovered, stirring occasionally, for about 8-10 minutes or until the orzo is tender and has absorbed most of the broth.

          Add Cream and Cheese: Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Cook for an additional 2-3 minutes, allowing the sauce to thicken. If the mixture appears too thick, you can add a splash of chicken broth or water to reach your desired consistency.

            Combine Chicken: Return the cooked chicken to the skillet, stirring until well combined. Adjust seasoning with more salt and pepper if needed.

              Garnish and Serve: Remove from heat and sprinkle with fresh parsley. Serve hot with lemon wedges on the side for a fresh zing.
