1 ½ cups Arborio rice

4 cups low-sodium vegetable or chicken broth

1 cup dry white wine (such as Sauvignon Blanc)

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz cremini mushrooms, sliced

2 tbsp olive oil

2 tbsp unsalted butter

½ cup grated Parmesan cheese (plus extra for garnish)

½ cup heavy cream

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Broth: In a saucepan, combine the vegetable or chicken broth and bring it to a simmer. Keep warm over low heat.

    Sauté the Aromatics: In a large skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and sauté for an additional 1 to 2 minutes until fragrant.

      Cook the Mushrooms: Add the sliced cremini mushrooms to the skillet and cook for about 5-7 minutes until they have released their moisture and are golden brown. Season with salt, pepper, and thyme.

        Toast the Rice: Add the Arborio rice to the skillet and stir well to coat it with the oil and flavors. Cook for about 2 minutes, stirring constantly until the rice is lightly toasted.

          Deglaze with Wine: Pour in the white wine and cook, stirring until the wine has mostly evaporated.

            Add the Broth Gradually: Begin adding the warm broth, one ladle at a time, stirring continually. Allow the rice to absorb the liquid before adding more. This process should take about 18-20 minutes; the rice should be creamy and al dente.

              Finish with Cream and Cheese: Once the rice reaches the desired consistency, remove from heat. Stir in the remaining tablespoon of butter, heavy cream, and grated Parmesan cheese until combined and creamy. Adjust the seasoning with salt and pepper if needed.
