4 large whole wheat or spinach tortillas

1 cup baby spinach leaves

1 medium cucumber, thinly sliced

1 large carrot, shredded

1 red bell pepper, sliced into strips

1 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/2 avocado, sliced

1 tablespoon olive oil

Salt and pepper to taste

Optional: cracked black pepper or smoked paprika for garnish

Prepare the Tortillas: Start by lightly warming the tortillas in a pan over low heat for about 30 seconds on each side, or until they are pliable. This will make it easier to roll them up later.
