1 cup cottage cheese (full-fat or low-fat)

6 large eggs

1 cup spinach (fresh, chopped)

1/2 cup bell peppers (diced, any color)

1/2 cup cherry tomatoes (halved)

1/2 onion (finely chopped)

1 cup shredded cheese (cheddar or mozzarella)

1/4 cup milk (or a dairy-free alternative)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Fresh herbs (such as parsley or basil) for garnish

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Sauté Vegetables: In a skillet over medium heat, add a splash of olive oil. Sauté the chopped onion and diced bell peppers for about 5 minutes until they soften. Add the spinach and cook for an additional 2-3 minutes until wilted. Remove from heat and set aside.

      Mix the Egg Base: In a large mixing bowl, whisk together the eggs and milk until well combined. Stir in the garlic powder, onion powder, salt, and pepper.

        Combine Ingredients: Add the cooked vegetables, cottage cheese, halved cherry tomatoes, and half of the shredded cheese to the egg mixture. Gently stir until everything is evenly distributed.

          Transfer to Baking Dish: Pour the egg mixture into a greased 9x13 inch baking dish. Spread it out evenly.

            Top It Off: Sprinkle the remaining shredded cheese over the top of the mixture.
