Cool Corn Salsa Cones

2 cups fresh corn kernels (about 4 ears of corn, or 1 can of corn, drained)

1 medium red onion, finely diced

1 red bell pepper, diced

1 jalapeño, seeded and finely chopped (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Salt and pepper to taste

1/4 teaspoon cumin (optional)

1 avocado, diced

8 small tortilla cones (or use ready-made mini cone holders)

Instructions
 

Prepare the Corn: If using fresh corn, boil or grill the corn on the cob until tender, about 5-7 minutes. Allow it to cool, then cut the kernels off the cob. If using canned corn, simply drain and rinse.

    Mix the Salsa: In a large mixing bowl, combine the corn kernels, diced red onion, red bell pepper, jalapeño, and cilantro.

      Season: Add lime juice, and season with salt, pepper, and cumin (if using). Mix everything well until fully combined.

        Add Avocado: Gently fold in the diced avocado, being careful not to mash it too much. This gives the salsa a creamy texture.

          Chill: Cover the bowl with plastic wrap and refrigerate the salsa for at least 30 minutes to allow the flavors to meld together.

            Prepare the Cones: If you’re making your own tortilla cones, preheat your oven to 375°F (190°C). Cut small rounds of tortillas, then drape them over the upsides of an oven-safe, cone-shaped mold or upside-down muffin tin. Bake for 10-12 minutes until golden and crispy. Let them cool completely.

              Assemble: Once the salsa is chilled and the cones are cool, fill each cone generously with the corn salsa mixture.

                Serve and Enjoy: Place the filled cones in a cup or holder to keep them upright, and serve as a refreshing appetizer or snack at your next gathering!
