Ingredients

1 cup dried green or brown lentils, rinsed and drained

1 can (400ml) coconut milk

2 cups vegetable broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon red curry paste (adjust for spice preference)

1 can (14 oz) diced tomatoes

1 medium carrot, diced

1 bell pepper (any color), chopped

2 cups fresh spinach or kale, chopped

2 tablespoons olive oil

1 tablespoon soy sauce or tamari

1 teaspoon ground cumin

1 teaspoon turmeric

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, for garnish (optional)

Instructions

Prepare Ingredients: Gather and prepare all ingredients (chopping, measuring).

Sauté Aromatics: In a large pot over medium heat, add olive oil. Once hot, add chopped onion and sauté until translucent (about 5 minutes). Add the minced garlic and grated ginger, cooking for another minute until fragrant.

Add Curry Flavor: Stir in the red curry paste, ground cumin, and turmeric, cooking for 1 more minute to release the spices' aromas.

Combine Vegetables and Lentils: Add the diced tomatoes, carrot, bell pepper, and rinsed lentils to the pot. Stir well to coat with the curry mixture.

Simmer the Stew: Pour in the vegetable broth and coconut milk. Bring to a gentle boil, reduce the heat, and let simmer uncovered for about 25-30 minutes, or until the lentils are tender and the stew thickens. Stir occasionally to prevent sticking.

Finish with Greens and Seasoning: Once the lentils are cooked through, add the chopped spinach or kale, soy sauce, lime juice, salt, and pepper. Stir until the greens are wilted and everything is well combined. Adjust seasoning to taste.

Garnish and Serve: Serve hot in bowls, garnished with fresh cilantro if desired. Pairs beautifully with rice or crusty bread!
