1 lb (450g) ground beef (80/20 lean-to-fat ratio)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/4 cup beef broth (optional for moisture)

For the Taco Assembly:

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheddar cheese or queso fresco

1/2 cup sour cream or Greek yogurt

1/2 cup fresh cilantro, chopped

1 jalapeño, sliced (optional for heat)

Lime wedges for serving

Instructions
 

Prepare the Beef Filling:

    - In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent.

      - Add the minced garlic and cook for another minute until fragrant.

        - Increase the heat to medium-high and add the ground beef to the skillet. Cook, breaking it apart with a wooden spoon, until browned (about 5-7 minutes).

          - Add the chili powder, cumin, smoked paprika, oregano, salt, and black pepper to the beef. Stir to coat the meat in the spices evenly.

            - If using, pour in the beef broth to enhance moisture. Stir well and let simmer for another 5 minutes, allowing the flavors to meld. Remove from heat.

              Prepare the Tortillas:

                - If using corn tortillas, warm them in a dry skillet over medium heat for about 30 seconds each side until soft and pliable. Flour tortillas can be warmed similarly or in the microwave.

                  Assemble the Tacos:

                    - Take a warm tortilla and add a generous spoonful of the seasoned beef filling.

                      - Top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.

                        - Add fresh cilantro and sliced jalapeños if desired. Serve with lime wedges on the side for squeezing over the tacos.
