Cinnamon Sugar Pretzel Bites

1 ¼ cups warm water (110°F to 115°F)

2 tablespoons granulated sugar

2 ¼ teaspoons active dry yeast (1 packet)

4 cups all-purpose flour

½ teaspoon salt

⅓ cup baking soda

1 large egg, beaten (for egg wash)

½ cup unsalted butter, melted

½ cup granulated sugar (for coating)

2 teaspoons ground cinnamon

Instructions
 

Activate Yeast: In a mixing bowl, combine warm water and 2 tablespoons of sugar. Sprinkle yeast over the top and let it sit for 5 minutes until foamy.

    Make Dough: In a large bowl, mix flour and salt. Pour in the yeast mixture and stir until combined. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

      First Rise: Place the dough in an oiled bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

        Preheat Oven: Preheat your oven to 450°F (232°C) and line two baking sheets with parchment paper.

          Shape Pretzel Bites: After the dough has risen, turn it out onto a floured surface. Divide into four pieces. Roll each piece into a long rope about 1 inch thick, then cut into 1-inch pieces to form bites.

            Boil Bites: In a large pot, bring 10 cups of water to a simmer and add the baking soda. Carefully add pretzel bites in batches, boiling them for 30 seconds each. Use a slotted spoon to remove them and place them on a prepared baking sheet.

              Egg Wash: Brush each pretzel bite with the beaten egg to give them a golden color when baked.

                Bake: Bake in the preheated oven for 12-15 minutes, or until golden brown.

                  Make Cinnamon Sugar Coating: In a small bowl, mix together ½ cup sugar and 2 teaspoons of cinnamon.

                    Coat Pretzel Bites: As soon as the pretzel bites come out of the oven, brush them with melted butter and toss them in the cinnamon sugar mixture until well coated.

                      Serve: Let the pretzel bites cool slightly before serving. Enjoy them warm, with a side of cream cheese frosting or chocolate sauce for dipping if desired!
