8 oz (225g) egg noodles or spaghetti

4 tbsp unsalted butter

4 cloves garlic, minced

1-2 fresh red chilies, finely chopped (adjust to taste)

2 tbsp soy sauce

1 tbsp oyster sauce (optional for depth)

1 tsp sesame oil

1 tsp sugar

1/4 tsp black pepper

2 green onions, finely chopped

2 tbsp fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Noodles:

    Bring a large pot of salted water to a boil. Add the egg noodles or spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

      Prepare the Sauce:

        While the noodles are cooking, melt the butter in a large skillet over medium heat. Add the minced garlic and chopped red chilies, sautéing for about 1-2 minutes until fragrant but not browned.

          Combine Ingredients:

            Stir in the soy sauce, oyster sauce (if using), sesame oil, sugar, and black pepper into the skillet. Let it cook for another minute, allowing all the flavors to meld.

              Toss the Noodles:

                Add the drained noodles to the skillet, tossing to coat them evenly with the garlic butter sauce. If the noodles seem dry, gradually add reserved pasta water, a little at a time, until desired consistency is achieved.

                  Garnish and Serve:

                    Remove from heat and fold in the chopped green onions. Serve hot, garnished with fresh cilantro and lime wedges for an extra zing.
