Chicken Zucchini Stir Fry

1 lb (450g) boneless, skinless chicken breast, thinly sliced

2 medium zucchinis, sliced into half-moons

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 cup snow peas, trimmed

3 cloves garlic, minced

1 tbsp fresh ginger, minced

3 tbsp soy sauce (low sodium, if preferred)

1 tbsp oyster sauce

1 tbsp sesame oil

2 tbsp vegetable oil (for frying)

1 tsp cornstarch mixed with 2 tbsp cold water (optional for thickening)

Salt and pepper to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: In a bowl, toss the sliced chicken with a pinch of salt and pepper. Allow it to marinate for about 10 minutes while you prepare the vegetables.

    Heat the Wok: In a large wok or non-stick skillet, heat 1 tablespoon of vegetable oil over medium-high heat.

      Cook the Chicken: Add the marinated chicken to the hot oil, stirring continuously. Cook for about 5-7 minutes, or until the chicken is lightly browned and cooked through. Remove from the pan and set aside.

        Sauté Aromatics: In the same pan, add another tablespoon of vegetable oil. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

          Add Vegetables: Toss in the sliced zucchinis, bell peppers, and snow peas. Stir-fry for about 3-4 minutes until the veggies are crisp-tender but still bright in color.

            Combine and Flavor: Return the cooked chicken to the pan. Pour in the soy sauce, oyster sauce, and sesame oil. Stir well to combine all ingredients. If you prefer a thicker sauce, add the cornstarch mixture at this stage and stir until the sauce thickens slightly.

              Final Seasoning: Taste and adjust seasoning if necessary, adding more soy sauce or a pinch of salt if needed.

                Garnish & Serve: Remove from heat and transfer to a serving dish. Garnish with sliced green onions and sesame seeds. Serve hot over steamed rice or noodles.
