Ingredients

1 pint cherry tomatoes, halved

8 ounces burrata cheese

2 tablespoons extra-virgin olive oil

1 tablespoon balsamic vinegar

1 clove garlic, minced

1 small bunch fresh basil, torn into small pieces

Salt and freshly cracked black pepper, to taste

Optional: A sprinkle of crushed red pepper flakes for heat

Optional: Toasted pine nuts for extra crunch

Instructions

Prepare the Vegetables: In a large bowl, combine the halved cherry tomatoes and minced garlic. Drizzle with 1 tablespoon of olive oil and the balsamic vinegar. Season with a pinch of salt and freshly cracked black pepper. Gently toss to coat the tomatoes evenly.

Rest for Flavor: Allow the cherry tomato mixture to rest for about 10 minutes. This step enhances the flavor as the tomatoes release their juices.

Plate the Cheese: While the tomatoes rest, carefully place the burrata in the center of a large serving platter. Using your hands, gently break the burrata slightly to allow the creamy interior to ooze out.

Arrange the Salad: After letting the tomatoes marinate, spoon the tomato mixture over and around the burrata, ensuring a colorful presentation.

Add Freshness: Scatter the torn basil leaves over the salad for a fresh aromatic touch.

Finish the Dish: Drizzle the remaining tablespoon of olive oil over the salad. If desired, add a pinch of crushed red pepper flakes for heat and sprinkle toasted pine nuts for added texture.

Serve: Serve immediately with crusty bread or enjoy it as a refreshing side dish!
