Cheesy Jalapeño Potato Casserole

4 large russet potatoes, peeled and thinly sliced

1 cup creamy cheddar cheese, shredded

1 cup pepper jack cheese, shredded

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1/2 cup milk

1 small onion, finely diced

4-5 fresh jalapeños, sliced (adjust for spice preference)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and black pepper to taste

1 cup breadcrumbs

1/4 cup unsalted butter, melted

1/4 cup fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Potato Layer: In a large mixing bowl, combine the sliced potatoes, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well until the potatoes are evenly coated with the spices.

      Make the Cheese Mixture: In another bowl, mix together the shredded cheddar cheese, pepper jack cheese, cream of chicken soup, sour cream, and milk. Stir until smooth and fully combined.

        Build the Layers: In a greased 9x13 inch baking dish, begin layering. First, add half of the seasoned potato slices to the dish. Next, pour half of the cheese mixture over the potatoes and top with half of the sliced jalapeños. Repeat these layers with the remaining potatoes, cheese mixture, and jalapeños.

          Topping Preparation: In a small bowl, combine the breadcrumbs and melted butter. Mix until the breadcrumbs are evenly coated.

            Bake the Casserole: Sprinkle the breadcrumb mixture evenly over the top of the casserole. Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

              Uncover and Broil: After 45 minutes, remove the foil and broil the casserole for an additional 10-15 minutes, or until the top is golden brown and the casserole is bubbling.

                Garnish and Serve: Once done, remove from the oven and let it cool for about 10 minutes. Garnish with fresh cilantro before serving.
