Charred Pepper Pasta Toss

8 oz spaghetti or your preferred pasta

2 large bell peppers (red and yellow), cut into thick strips

1 medium red onion, sliced

3 cloves garlic, minced

1/4 cup olive oil

1 tsp smoked paprika

1/2 tsp red pepper flakes (adjust to taste)

Salt and black pepper to taste

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, chopped

1/4 cup grated Parmesan cheese (optional)

Zest and juice of 1 lemon

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Char the Peppers and Onion: While the pasta cooks, heat a grill pan or outdoor grill over medium-high heat. Toss the bell peppers and red onion with 2 tablespoons of olive oil, salt, and black pepper. Grill for about 4-5 minutes on each side, or until they are nicely charred and tender. Remove and let cool slightly, then chop into bite-sized pieces.

      Sauté the Garlic: In a large skillet, heat the remaining olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

        Combine Ingredients: Add the charred peppers, onion, smoked paprika, red pepper flakes, and cherry tomatoes to the skillet. Sauté for another 3-4 minutes until the tomatoes begin to soften.

          Toss the Pasta: Add the cooked pasta to the skillet along with the reserved pasta water, chopped basil, lemon zest, and lemon juice. Toss everything together until the pasta is coated and heated through. Season with more salt and black pepper to taste.

            Serve: Transfer the pasta to serving plates and sprinkle with grated Parmesan cheese if desired. Garnish with extra basil leaves. Enjoy warm!
