2 medium-sized ears of fresh corn, husked

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 jalapeño pepper, seeded and diced (optional for heat)

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon olive oil (for charring)

Tortilla chips, for serving

Instructions
 

Char the Corn: Preheat a grill or grill pan over medium-high heat. Brush the corn with olive oil and place it on the grill. Cook for about 10-12 minutes, turning occasionally, until the corn is nicely charred and tender. Remove from heat and allow it to cool slightly.

    Prepare the Corn: Once the corn is cool enough to handle, use a sharp knife to carefully cut the kernels off the cob into a large mixing bowl.

      Mix the Ingredients: To the bowl with the corn, add the diced avocados, cherry tomatoes, red onion, jalapeño (if using), lime juice, cilantro, and garlic powder. Season with salt and pepper to taste.
