4 ripe heirloom tomatoes (varied colors for visual appeal)

8 ounces fresh mozzarella cheese (preferably buffalo mozzarella)

1 cup fresh basil leaves

3 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar (or balsamic glaze for sweetness)

Salt and freshly cracked black pepper to taste

Optional: a sprinkle of red pepper flakes for a kick

Prepare the Tomatoes: Slice the heirloom tomatoes into 1/4-inch thick rounds. If using particularly large tomatoes, you may want to halve them before slicing for a more manageable size.

    Slice the Mozzarella: Cut the fresh mozzarella into 1/4-inch thick slices, similar in thickness to the tomatoes so they layer beautifully.

      Layer the Salad: On a large serving platter or individual plates, alternate the tomato slices and mozzarella slices in an overlapping circle or a straight line, creating a beautiful, colorful pattern.
