8 oz penne pasta (or pasta of your choice)

2 tablespoons olive oil

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, bocconcini or ciliegine

1/4 cup fresh basil leaves, chopped

1 tablespoon balsamic glaze

1/4 teaspoon red pepper flakes (optional)

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Garlic and Tomatoes: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften and release their juices.

        Combine Ingredients: Return the cooked chicken to the skillet with the tomatoes. Add the cooked pasta, fresh mozzarella balls, red pepper flakes (if using), and basil. Gently toss to combine all ingredients.

          Drizzle with Balsamic Glaze: Remove the skillet from heat and drizzle the balsamic glaze over the chicken pasta mixture. Toss gently to coat the ingredients evenly.

            Serve: Divide the Caprese Chicken Pasta among plates. Top with additional basil, grated Parmesan cheese, and a drizzle of balsamic glaze if desired.
