Cajun Salmon Rice Bowls

Ingredients
  

2 salmon fillets (about 6 oz each)

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 cup jasmine rice

2 cups vegetable broth (or water)

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 avocado, sliced

1 lime, juiced

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

Prepare the Rice: In a medium saucepan, combine jasmine rice and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and broth is absorbed. Fluff with a fork and set aside.

    Season the Salmon: While the rice is cooking, rub Cajun seasoning all over the salmon fillets. Make sure each fillet is evenly coated for maximum flavor.

      Cook the Salmon: Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned salmon fillets and cook for about 4-5 minutes on each side, or until the salmon is golden and cooked through. Remove from heat and let rest for a couple of minutes before flaking into bite-sized pieces.

        Sauté the Vegetables: In the same skillet, add the diced red onion, bell pepper, and garlic. Sauté for 3-4 minutes, or until the vegetables are tender. If using frozen corn, add it to the skillet during the last minute of cooking. Season with salt and pepper to taste.

          Assemble the Bowls: In serving bowls, place a generous scoop of jasmine rice at the bottom. Top it with the sautéed vegetable mixture and flaked Cajun salmon. Add sliced avocado and drizzle with lime juice for freshness.

            Garnish and Serve: Finish with a sprinkle of fresh cilantro for flavor and color. Serve immediately, and enjoy your delicious Cajun Salmon Rice Bowls!
