Black Pepper Chicken

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black peppercorns, freshly ground

1 tablespoon cornstarch

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon hoisin sauce

1 tablespoon sesame oil

4 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 onion, sliced

2 green onions, chopped (for garnish)

Red chili flakes, to taste (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the chicken pieces with ground black pepper, cornstarch, soy sauce, rice vinegar, hoisin sauce, and sesame oil. Mix well until the chicken is evenly coated. Allow it to marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Prepare the Stir-Fry: Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and stir-fry for about 5-7 minutes until it’s fully cooked and golden brown. Remove the chicken from the pan and set it aside.

      Sauté the Vegetables: In the same skillet, add a little more oil if needed and toss in the minced garlic, grated ginger, red bell pepper, green bell pepper, and onion. Stir-fry for about 3-4 minutes until the vegetables are slightly tender but still crisp.

        Combine and Serve: Return the cooked chicken to the skillet and stir to combine with the vegetables. Adjust seasoning with additional black pepper, soy sauce, and red chili flakes if you prefer extra heat. Cook for another minute to meld the flavors.

          Garnish and Plate: Remove from heat and transfer the Black Pepper Chicken to a serving dish. Garnish with chopped green onions before serving.
