Ingredients

8 oz linguine or spaghetti pasta

1 lb large shrimp, peeled and deveined

6 tbsp unsalted butter

4 cloves garlic, minced

1/2 tsp red pepper flakes (adjust to taste)

1/2 cup chicken or vegetable broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Zest and juice of 1 lemon

1 cup fresh spinach leaves

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes per side, or until the shrimp turns pink and opaque. Remove the shrimp from the skillet and set aside.

Make the Garlic Butter Sauce: In the same skillet, add the remaining 4 tablespoons of butter and the minced garlic. Sauté for about 1 minute, or until the garlic is fragrant but not browned. Add the red pepper flakes and stir for another 30 seconds.

Combine Ingredients: Pour in the chicken or vegetable broth, stirring well to combine. Bring to a gentle simmer. Lower the heat, then add the heavy cream and stir for 1-2 minutes until the mixture slightly thickens.

Add Cheese and Seasoning: Stir in the grated Parmesan cheese, lemon zest, and lemon juice. Mix until the cheese is melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water a little at a time until you reach desired consistency.

Toss in Pasta and Spinach: Add the cooked pasta and spinach leaves to the skillet, tossing to coat everything evenly in the sauce. Cook for 1-2 minutes, or until the spinach wilts.

Return Shrimp to the Dish: Gently fold the cooked shrimp back into the pasta, ensuring they are well-mixed with the sauce and pasta.

Final Adjustments: Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed.

Serve: Plate the garlic butter shrimp pasta, garnishing with fresh parsley. Enjoy warm!
