1 ¼ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

2 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup ripe bananas, mashed (about 2 medium bananas)

1 cup sour cream

1 tablespoon lemon juice

1 package (3.4 oz) instant vanilla pudding mix

2 cups milk

1 banana, sliced, for garnish

Whipped cream, for serving (optional)

Additional graham cracker crumbs, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, ¼ cup sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

      Make the Cheesecake Batter: In a large bowl, beat the softened cream cheese and 1 cup sugar until light and fluffy. Add in the vanilla extract, then beat in the eggs one at a time, mixing well after each addition.

        Incorporate Bananas: Fold in the mashed bananas, sour cream, and lemon juice until fully blended.

          Add Pudding: In a separate bowl, whisk the instant vanilla pudding mix with the milk until thickened. Gently fold this pudding mixture into the banana cheesecake batter until just combined.

            Combine and Pour: Pour the cheesecake batter over the cooled crust in the springform pan. Smooth the top with a spatula.

              Bake the Cheesecake: Bake in the preheated oven for 55-65 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

                Chill: Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, to fully set.
