2 large ripe bananas

1 ½ cups whole milk

¾ cup granulated sugar

¼ cup cornstarch

¼ teaspoon salt

3 large egg yolks

2 tablespoons unsalted butter

1 teaspoon pure vanilla extract

1 pre-made 9-inch pie crust (can be graham cracker or traditional)

1 cup heavy whipping cream

2 tablespoons powdered sugar

Additional banana slices for garnish

Prepare the Crust: Preheat your oven to 350°F (175°C). If using a pre-made crust, bake it according to package instructions until golden brown. Allow it to cool completely on a wire rack.

    Make the Banana Filling: In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually stir in the milk until smooth. Cook over medium heat, stirring constantly, until the mixture begins to thicken and bubble.

      Tempering the Egg Yolks: In a separate bowl, lightly beat the egg yolks. Once the milk mixture is bubbling, ladle a small amount of the hot mixture into the egg yolks, whisking continuously. This will temper the eggs and prevent them from scrambling. Slowly add the tempered yolks back into the saucepan, continuing to whisk.

        Finish the Custard: Continue to cook the mixture over medium heat for about 2-3 minutes until it's luxuriously thick. Remove from heat and stir in the butter and vanilla extract until the butter is melted and the mixture is smooth.
