Balsamic Glazed Peach Salad

4 ripe peaches, pitted and sliced

4 cups mixed greens (arugula, spinach, and baby kale)

1/2 cup crumbled feta cheese

1/4 cup candied pecans (or walnuts)

1/4 cup balsamic vinegar

2 tablespoons honey

1 tablespoon olive oil

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Prepare the Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and honey. Bring it to a gentle simmer over medium heat. Cook for about 5-7 minutes, stirring occasionally, until it thickens slightly. Remove from heat and let it cool.

    Grill the Peaches: Preheat a grill or grill pan over medium-high heat. Lightly brush the peach slices with olive oil. Grill the peaches for 2-3 minutes on each side until grill marks appear and they become slightly caramelized. Remove from heat and allow them to cool slightly.

      Assemble the Salad: In a large bowl, combine the mixed greens. Top with grilled peaches, crumbled feta cheese, and candied pecans.

        Dress the Salad: Drizzle the balsamic glaze over the salad, and add olive oil if desired. Season with salt and pepper to taste. Gently toss to combine all ingredients.
