Ingredients

4 pieces of fresh haddock fillets (about 6 ounces each)

1 cup panko breadcrumbs

4 cloves garlic, minced

3 tablespoons unsalted butter, melted

1 teaspoon dried oregano

1 teaspoon paprika

1 lemon, zested and juiced

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Olive oil, for drizzling

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper for easy cleanup.

Prepare the Garlic Crumbs: In a medium bowl, combine the panko breadcrumbs, minced garlic, melted butter, oregano, paprika, and lemon zest. Mix until the breadcrumbs are evenly coated. Set aside.

Season the Haddock: Rinse the haddock fillets under cold water and pat dry with paper towels. Place them skin-side down in the prepared baking dish. Drizzle a small amount of olive oil over the fillets and season with salt and pepper. Squeeze fresh lemon juice over the top for added flavor.

Add Breadcrumb Topping: Evenly distribute the garlic breadcrumb mixture over the haddock fillets, pressing down gently to ensure it adheres well.

Bake the Haddock: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. The garlic crumbs should be golden and crispy.

Garnish and Serve: Once done, remove the dish from the oven and sprinkle chopped parsley over the top for a fresh finish. Serve immediately with lemon wedges on the side.
