Baked Chicken Alfredo Lasagna Rollups

12 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

2 cups shredded mozzarella cheese, divided

1 cup grated Parmesan cheese

2 cups Alfredo sauce (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

    Cook the Lasagna Noodles: Boil a large pot of salted water. Add the lasagna noodles and cook according to package instructions until al dente. Drain and rinse them under cold water to stop the cooking process. Set aside.

      Prepare the Filling: In a large mixing bowl, combine the cooked shredded chicken, ricotta cheese, 1 cup of mozzarella cheese, half of the Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

        Assemble the Rollups: Lay one lasagna noodle flat on a clean surface. Spread about 2-3 tablespoons of the chicken filling along the noodle. Carefully roll the noodle up, starting from one end. Place the rollup seam-side down in the prepared baking dish. Repeat with the remaining noodles and filling.

          Add Alfredo Sauce: Pour the Alfredo sauce evenly over the top of the lasagna rollups. Sprinkle the remaining mozzarella and Parmesan cheese over the sauce for a cheesy topping.

            Bake: Cover the baking dish with aluminum foil (to prevent burning) and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once baked, allow the rollups to cool for about 5 minutes before serving. Garnish with fresh chopped parsley for a colorful touch.
