2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 ½ cups all-purpose flour

½ cup granulated sugar

1 tablespoon baking powder

1 teaspoon ground cinnamon

¼ teaspoon nutmeg

½ teaspoon salt

2 large eggs

1 cup buttermilk (or regular milk with 1 tbsp vinegar)

¼ cup unsalted butter, melted

1 teaspoon vanilla extract

¼ cup brown sugar, for topping

Extra cinnamon and sugar mixture, for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.

    Prepare the Apples: In a bowl, toss the diced apples with about 1 tablespoon of granulated sugar and a sprinkle of cinnamon. Set aside.

      Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, nutmeg, and salt until well combined.

        Combine the Wet Ingredients: In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; it's okay if the batter is lumpy. Fold in the prepared apples, ensuring they are evenly distributed.
