Avocado Chicken Quesadilla Melts

2 cups cooked chicken, shredded or diced (rotisserie chicken works great)

1 ripe avocado, mashed

1 cup shredded Monterey Jack cheese (or a blend of your choice)

1/2 cup diced tomatoes (fresh or canned)

1/4 cup chopped green onions (scallions)

1/4 cup fresh cilantro, chopped

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon lime juice

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil or butter (for cooking)

Salsa and sour cream for serving (optional)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, mashed avocado, shredded cheese, diced tomatoes, chopped green onions, cilantro, garlic powder, cumin, lime juice, salt, and pepper. Mix thoroughly until all ingredients are evenly distributed.

    Heat the Pan: In a large skillet or griddle, heat 1 tablespoon of olive oil or butter over medium heat.

      Assemble the Quesadillas: Place one tortilla in the skillet. On half of the tortilla, spread a generous portion of the chicken and avocado mixture. Fold the other half of the tortilla over the filling to create a half-moon shape. Press down lightly to seal.

        Cook the Quesadilla: Cook the quesadilla for about 3-4 minutes on one side, until golden brown and the cheese starts to melt. Carefully flip it over and cook for another 3-4 minutes on the other side until nicely browned and the cheese is fully melted.

          Repeat: Remove the cooked quesadilla from the skillet and repeat the process with the remaining tortillas and filling mixture. You can add more oil or butter to the skillet if needed.

            Serve: Once all quesadillas are cooked, cut them into wedges and serve warm with salsa and sour cream on the side.
