Almond Joy Coconut Bites

2 cups unsweetened shredded coconut

1 cup almond flour

1/2 cup sweetened condensed milk (or coconut milk for a dairy-free option)

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 cup semi-sweet chocolate chips

1/2 cup whole almonds (raw or roasted, unsalted)

Optional: Sea salt for sprinkling on top

Prepare the Mixture: In a large mixing bowl, combine the shredded coconut, almond flour, sweetened condensed milk, vanilla extract, and salt. Mix well until all ingredients are fully combined. The mixture should be sticky but hold together when pressed.

    Shape the Bites: Using your hands, take a small portion of the mixture (about 1 tablespoon) and press it firmly into a small mound. Place one whole almond on top of each mound, then take another small portion of the coconut mixture to cover the almond, forming a small ball. Ensure the almond is fully enclosed. Repeat this process until all the mixture is used.

      Chill: Once all the coconut bites are shaped, place them on a parchment-lined baking sheet and refrigerate for about 30 minutes to firm up.

        Melt the Chocolate: While the coconut bites are chilling, melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals, stirring in between until smooth.

          Coat the Bites: Remove the chilled coconut bites from the refrigerator. Dip each bite into the melted chocolate, making sure to coat completely. Use a fork to remove the bites from the chocolate, allowing excess chocolate to drip off before placing them back on the parchment paper.

            Allow to Set: If desired, sprinkle a pinch of sea salt on top of each chocolate-coated bite before the chocolate sets. Place the coated bites back in the refrigerator for another 15-20 minutes to allow the chocolate to harden.
