Air Fryer Fish Tacos

Ingredients
  

1 lb white fish fillets (such as cod, tilapia, or mahi-mahi)

1 cup all-purpose flour

1 cup panko breadcrumbs

2 large eggs

1 tsp paprika

1 tsp garlic powder

1 tsp cumin

½ tsp cayenne pepper (optional for heat)

Salt and black pepper to taste

8 small corn tortillas

1 cup shredded cabbage (purple or green)

½ cup pico de gallo or salsa

½ cup sour cream or Greek yogurt

1 lime, cut into wedges

Fresh cilantro for garnish

Instructions
 

Prepare the Fish:

    Pat the fish fillets dry with paper towels. If the fillets are thick, consider cutting them into smaller, bite-sized pieces for easier handling and cooking.

      Set Up Breading Station:

        In three separate bowls, set out the flour mixed with paprika, garlic powder, cumin, cayenne pepper, salt, and pepper; the beaten eggs; and the panko breadcrumbs.

          Bread the Fish:

            Dip each piece of fish into the flour mixture, ensuring it’s well coated. Shake off excess flour, then dip it into the beaten eggs, and finally, coat it with panko breadcrumbs, pressing gently to adhere.

              Preheat the Air Fryer:

                Preheat your air fryer to 400°F (200°C) for about 5 minutes while you finish breading the fish.

                  Air Fry the Fish:

                    Lightly spray the air fryer basket with non-stick cooking spray. Arrange the breaded fish pieces in a single layer in the basket, making sure they do not touch each other. Cook for 8-10 minutes, flipping halfway through, until the fish is golden brown and cooked through (internal temperature should reach 145°F).

                      Warm the Tortillas:

                        While the fish is cooking, wrap the corn tortillas in a damp paper towel and microwave for about 30 seconds to 1 minute until warm and pliable.

                          Assemble the Tacos:

                            Place a generous amount of shredded cabbage on each tortilla, followed by two pieces of the crispy fish. Top with pico de gallo or salsa and a dollop of sour cream or Greek yogurt.

                              Garnish and Serve:

                                Squeeze fresh lime juice over the tacos, sprinkle with chopped cilantro, and serve immediately with additional lime wedges on the side.
