Ingredients

1 medium head green cabbage, thinly sliced

2 large onions, thinly sliced (yellow or red)

3 tablespoons olive oil

2 tablespoons unsalted butter

2 tablespoons brown sugar (light or dark)

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons balsamic vinegar

1 teaspoon fresh thyme leaves (optional for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Ingredients: Begin by removing the outer leaves of the cabbage and washing it thoroughly. Cut it in half, core it, and slice it thinly into ribbons. Peel and slice the onions thinly as well.

Heat the Pan: In a large skillet or sauté pan, heat the olive oil and butter over medium heat until the butter is melted and bubbling.

Sauté the Onions: Add the sliced onions to the skillet. Cook them for about 10-12 minutes, stirring occasionally until they become soft and translucent.

Caramelize Onions: Add the brown sugar to the onions, and continue cooking for another 5-7 minutes, stirring frequently, until they turn a deep golden brown. If they start to stick to the pan, you can add a splash of water to deglaze.

Add Cabbage: Stir in the sliced cabbage, salt, and black pepper. Mix everything well to combine.

Cook the Cabbage: Cook for about 15-20 minutes, stirring occasionally. The cabbage should start to wilt and take on the sweetness from the caramelized onions. If necessary, reduce the heat to medium-low to avoid burning.

Finish with Balsamic: Once the cabbage is tender and caramelized to your liking, drizzle the balsamic vinegar over the mixture and stir well to combine. Let it cook for another minute.

Garnish and Serve: Remove the skillet from heat. If desired, sprinkle the fresh thyme and chopped parsley over the top for added freshness. Serve warm as a delightful side dish.
